Ingredients:
1 kg chicken, cut into serving pieces
1/2 cup soy sauce
1/2 cup vinegar
1 head garlic, minced
1 onion, chopped
1 tsp black peppercorns
3-4 pieces dried bay leaves
1/4 cup brown sugar
1/4 cup cooking oil
1/2 cup water
2 tbsp oyster sauce
2 tbsp fish sauce (patis)
Instructions:
1. In a large bowl, mix together soy sauce, vinegar, minced garlic, chopped onion, black peppercorns, and dried bay leaves.
2. Add chicken to the marinade mixture and let it marinate for at least 1 hour or overnight in the fridge.
3. Heat cooking oil in a large pan or wok over medium heat. Add the marinated chicken and cook for about 10-15 minutes until brown.
4. Add the marinade mixture to the pan and bring it to a boil.
5. Add brown sugar, oyster sauce, fish sauce, and water to the pan. Stir to combine.
6. Reduce heat to low, cover the pan, and let it simmer for about 30-45 minutes or until the chicken is cooked through and tender.
7. Remove from heat and let it rest for a few minutes before serving.
